1/2 tsp. ground coriander

1 tsp. saltâ?¨

2 pinches freshly ground white pepper

Juice of 1 lime

2 whole boneless, skinless chicken breasts,

2 small shallots, peeled and finely chopped

â?¨1 large clove garlic, peeled and mincedâ?¨

1/4 tsp. shrimp paste â?¨

2 cups chicken stock

â?¨1/2 cup unsalted roasted peanuts, preferably â?¨

Spanish peanuts, ground to a pasteâ?¨

1 tbsp. kecap manis (see above)â?¨

â?¨1/4 tsp. grated gingerâ?¨

2 red Thai chiles, stemmed and finely chopped

1/4 cup lime juice
