Ingredients

5 cups chicken broth

1 large or 2 small bone-in chicken breasts, about 1 pound total

2 tablespoons olive oil

1/2 large onion, minced

2 large garlic cloves, minced

1 1/2 teaspoons dried Mexican oregano

1 1/2 cups finely chopped canned tomatoes with some juice

1 large green bell pepper, roasted, peeled, seeded and diced

2 cups canned hominy, rinsed

2 tablespoons minced cilantro

Finely minced chipotle chile en adobo, to taste

Salt

1 avocado, halved, pitted and neatly diced
