1/2 x yellow onion, diced

1 x clove garlic, minced

1 tsp cumin, ground

1 tsp oregano, ground

1 1/2 tsp salt, kosher

1/2 tsp pepper, ground

1/4 tsp cinnamon, ground

1 tbsp vegetable oil

2 tsp vegetable oil

1/2 x yellow onion, sliced

3 x cloves garlic, minced

1 x zucchini, sliced

1/2 x bell pepper, sliced

2-4 x dried New Mexico chilies, seeds and stems removed

1 28 oz can tomato sauce

2 tsp chili powder

1 cup chicken stock

1 tsp salt

1 tsp sugar

1/2 tsp black pepper

12 x corn tortillas

1/4 cup vegetable oil, preferably grapeseed

1 cup black olives, sliced

1 cup sharp cheddar cheese

sour cream and scallions, for serving
