  • 16 jumbo shrimp or prawns, deveined and with tails on
  • 1 large jalapeno chile , seeded
  • 2 large eggs , lightly beaten
  • 1/2 cup red quinoa , rinsed (or regular quinoa)
  • Sauce
  • 1/4 tsp cayenne
  • 1/4 tsp salt
  • 1/2 tsp dried oregano
  • 1 Tbsp lime juice
  • 1 bunch cilantro , cleaned and stemmed (2 cups leaves)
  • 1/4 cup extra-virgin olive oil
  • 2 garlic cloves
