Ingredients for 6 servings

2 tablespoons shallots , minced

1 1/2 tablespoons olive oil

For the Salad

1/2 cup smoked bacon , diced, cooked until crisp, drained (about 6 slices)

1/2 cup olive oil

1/4 cup dark brown sugar (I use brown sugar Splenda Blend)

1/8 teaspoon salt

3 heads bibb lettuce

salt & freshly ground black pepper

1 1/2 teaspoons Dijon mustard

3/4 cup black-eyed peas , canned and drained

For the Warm Bacon-Brown Sugar Vinaigrette

1 large acorn squash , quartered and seeded

3/4 cup pecans , roasted

6 ounces feta cheese , crumbled

1 large onion , peeled and trimmed

1 1/2 tablespoons balsamic vinegar

1/8 teaspoon fresh ground black pepper
