I'm a traditionalist when it comes to latkes. I don't want any freakin' truflle oil, zucchini, or squash. I want shredded potatoes and I want them fried. I have not tried this recipe, but it certainly looks right. Add a whack of sour cream and/or apple sauce and you are good to go. Eight nights of Channukah is plenty of time to perfect these babies.

5 pounds russet potatoes

4 mid-sized yellow onions

1/2 teaspoon ground white or black pepper

1 tablespoon coarse salt

2 eggs, lightly beaten

1/4 cup matzo meal

1-2 cup canola oil for frying (depending upon the number of pans used)
