¼ cup very finely chopped green onion , for garnish

2 cloves garlic , chopped

3 cups crawfish tail meat from boiled crawfish

1 small yellow onion , chopped

2 Tbsp. chopped celery

Fat from crawfish heads

½ red bell pepper , chopped

Salt and freshly ground black pepper
