3/4 tsp fine sea salt

1/2 tsp baking soda

1/4 tsp cayenne pepper

1/2 cup freshly grated Parmigiano-Reggiano cheese

2 1/2 tbsp cold unsalted butter, cut into 1/4-inch pieces

3/4 cup buttermilk, shaken to blend
