1 large red onion, cut into 4 slices

1 red bell pepper, cut into 4 thick slices

1 small zucchini, cut lengthwise into 4 slices

4 whole grain wraps or tortillas (8" diameter, about 120 calories each)

2 cups baby arugula or mixed greens

12 ounces smoked baked tofu
