2 punnets of strawberries, hulled and quartered

95 g of sugar

7 egg yolks

1 pinch of salt

2 punnets of strawberries

10 ml of balsamic vinegar, aged

10 g of sugar

5 g of fresh mint, chopped

300 ml of pouring cream

1 tbsp of finely chopped mint

1 dash of balsamic vinegar
