Juice of 4 limes (about 1/2 cup)

2 tablespoons red wine vinegar

1 tablespoon minced garlic (about 2-3 cloves)

2 tablespoons extra-virgin olive oil

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

2/3 cup honeydew melon, cut into 1/4″ cubes

2/3 cup cantaloupe, cut into 1/4″ cubes

1/3 cup cucumber, peeled and seeded, diced

1/3 cup red onion, diced

1/2 large jalapeno, seeded and diced

3 tablespoons finely chopped fresh mint leaves

zest of 1 lime

juice of 1 lime

1 teaspoon sugar, honey, or agave

kosher salt and freshly ground black pepper to taste
