  • 4 lbs boneless beef chuck, cut into 2 1/2 -inch cubes
  • Salt and freshly ground pepper
  • 2 medium onions, coarsely chopped
  • 3 cups full-bodied red wine, preferably Italian
  • 3 sage leaves
  • 2 whole cloves
  • 1 bay leaf
