Great muffins, don't take long to make and very easy too, don't even need a blender! Lemon gives a nice zesty kick at the end, my favourite part of all! Can also use frozen strawberries if you allow a couple of hours to defrost. Definitely recommended

2 1/2 cups self-rising flour

1 1/4 cups sugar, divided

1 (8-oz.) container sour cream

1/2 cup butter, melted

1 tablespoon lemon zest

1/4 cup fresh lemon juice

2 large eggs, lightly beaten

1 1/2 cups diced fresh strawberries
