1 package chopped frozen spinach (10 ounces)

3 tablespoons extra virgin olive oil (EVOO), divided

3 cloves garlic, chopped

1/2 small onion, chopped

1/2 small red bell pepper, 1/4 chopped, 1/4 cut into thin strips, for garnish

2 ounces prosciutto (about 3-4 slices), cut into ribbons
