Ingredients for 4 servings

200 g of puff pastry

4 shallots, finely sliced

100 ml of white wine vinegar

4 juniper berries, crushed

20 ml of olive oil

50 g of butter

4 red onions

75 g of caster sugar

200 g of Cornish blue cheese

plain flour for dusting
