1 large red onion, chopped

About1 ½ cups diced roasted, peeled peppers, such as red, yellow or green bell and poblano chiles or a combination (usually 2 or 3 whole peppers)

2 cloves garlic, finely chopped

Salt

8 ounces shredded Monterey jack cheese

8 ounces shredded mozzarella cheese

2 pounds refrigerated pizza dough (such as Trader Joe's)

1 egg, lightly beaten with 2 tablespoons milk

Mexican oregano

Coarse salt
