1 small clove of garlic, minced (about 1 teaspoon)

2 teaspoons fresh thyme leaves, divided

2 tablespoons grapeseed or other neutral oil

Salt and freshly ground black pepper

Splash of white wine (optional)

2 tablespoons crème fraîche, to serve

2 pieces of toast made from a hearty bread, to serve
