1½ large onions, peeled and thinly sliced

2½ lb butternut squash, peeled, seeded and sliced into ⅛-inch-thick crescents

1 large bunch sage leaves, peeled, seeded and sliced into ⅛-inch-thick crescents half left whole, half chopped

4 large garlic cloves, peeled and sliced

1 lb fresh spinach

Generous grating of nutmeg

Sea salt and freshly ground

Black pepper

1 lb dried lasagna noodles

2 (4-oz) balls mozzarella

¾ cup grated Parmesan, plus ½ cup extra, for sprinkling between layers
