Ingredients for 4 servings

1 pigeon

100 ml of rapeseed oil

2 sprigs of fresh thyme

salt

pepper

1/4 medium onion, finely chopped

2 large beetroots

10 g of salt

20 g of sugar

1 kg of large beetroot

50 g of wood chip

1 kg of beetroot, cooked

600 g of cooked beetroot, grated

100 g of shallots, finely chopped

40 ml of sherry vinegar

50 ml of oil

beetroot leaves

1 pear, fresh and ripe
