150 g of quinoa

1½ cups of water

½ tsp of fine sea salt

2 eggs, beaten

2 medium zucchini, grated

2 cloves of garlic, minced

3 spring onions, finely chopped

1 tbs of mint leaves, finely chopped

2 tbs of parsley, finely chopped

100 g of haloumi, sliced

60 g of wholemeal breadcrumbs

salt and pepper to taste

1 tbs of olive oil
