The Pastries:

10 ounces Roquefort, crumbled

1 garlic clove, chopped

1 tablespoon chopped chives

1 tablespoon brandy

1 tiny drop Tabasco or a few grains of cayenne pepper

12 ounces puff pastry

The Salad:

6 big handfuls of mixed baby greens (spring mix, mesclun) preferably one with lots of mizuna and arugula

3 shallots, chopped

2 tablespoons extra virgin olive oil

2 teaspoons balsamic vinegar

Juice of 1/2 lemon, or to taste

Salt and pepper to taste

2 firm-ripe pears

4 tablespoons coarsely chopped toasted macadamia nuts
