2 large egg yolks

1 large egg

4 tablespoons all-purpose flour

1 cup whole milk, cool but not cold

1 1/2 cups chopped raw cauliflower, about 6 ounces

1 pinch kosher salt

1 cup heavy cream

1 pinch sugar, to taste

Warm salad:

2 thick asparagus spears

2 baby yellow carrots

2 baby orange carrots

4 Brussels sprouts

1 tablespoon extra virgin olive oil, or to taste

Sea salt, to taste

Black pepper, to taste
