3/4 cup cornstarch

1 cup roasted almonds, coarsely ground

1 cup Japanese panko bread crumbs

3 large eggs, lightly beaten

About 6 cups peanut oil, for frying

Sliced almonds, toasted (for garnish)

Special equipment: frying thermometer

Smoked jalapeno seasoning

2 tablespoons ground chipotle chile pepper*

2 tablespoons smoked paprika

2 teaspoons salt

1 teaspoon garlic powder

1 teaspoon onion powder

Chile honey glaze

1/4 cup orange juice

1 1/2 tablespoons cornstarch

1/2 cup chicken stock

1/4 cup apple cider vinegar

1/4 cup honey

1/2 cup sugar

1 tablespoon chopped canned chipotle chiles**

1 tablespoon apple butter

2 teaspoons lime juice

1 teaspoon ground chipotle chile pepper

1 teaspoon ground ancho chile pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/8 teaspoon salt
