2 medium oranges , peel and pith removed, quartered through the ends and sliced crosswise into 1/4 inch thick pieces

ground black pepper

1 orange , cut into 4 wedges for garnish (optional)

1/2 cup vegetable oil

4 boneless skinless chicken cutlets (5 to 6 ounces)

5 ounces baby spinach (about 6 cups)

1 1/4 teaspoons grated orange zest (from 1 orange)

1 small shallot , minced (about 2 tablespoons)

1 teaspoon Dijon mustard
