  • 2 packages (14 ozs each) firm or extra-firm tofu, drained well
  • 2 Tbsps vegetable oil
  • 2 Tbsps soy sauce
  • 2 medium red bell peppers, seeds and ribs removed, cut into 1-inch-wide strips
  • 3 Tbsps smooth peanut butter
  • 2 Tbsps fresh lime juice
  • 1 Tbsp Asian-style chili-garlic sauce
  • 1 Tbsp light-brown sugar
  • 4 sprigs cilantro, for garnish (optional)
