Ingredients for 16 servings

1 ¾ cups + 2 Tbsps cake flour

1 cup sugar

½ cup + 2 ½ tsp hot milk

2 large eggs

½ cup salted butter

1 tsp pure vanilla extract (or any other flavouring of your choice)

1 ½ tsp baking powder

Preparation

1.

Preheat oven to 350F

In a stand mixer bowl with whisk attachment, combine cake flour and sugar on a stir speed for 30 seconds.

3.

Add in the hot milk and continue to mix the batter until all the ingredients are well incorporated.

4.

Add in the eggs, butter and pure vanilla extract and beat the mixture for a minute.

5.

Scrape down the sides of the bowl using a spatula and beat for another 1 ½ minute.

6.

Add in the baking powder and mix for 30 seconds at a low speed.

7.

Fill your cupcake liners with the batter and bake for 20 minutes or until a cake tester inserted in the middle of the cupcake comes out clean.

8.

Cool on wire racks. Decorate and enjoy!
