1/2 teaspoon freshly ground pepper

4 tablespoons extra-virgin olive oil, divided

3/4-1 1/4 teaspoons salt, divided

2 large eggs

2 large egg whites

1 cup low-fat ricotta cheese

2 tablespoons chopped fresh dill, or 2 teaspoons dried

2 tablespoons butter

1/3 cup crumbled feta, or goat cheese
