1 duck breast, about 1 pound

3 medium-size leeks (white and pale green parts only), halved lengthwise, thinly sliced and washed thoroughly

1 tablespoon minced fresh ginger

1 (8 ounce) package soba noodles (see note)

2 teaspoons Asian sesame oil

1/2 pound sugar snap peas

1/2 to 2/3 cup water or chicken stock

2 tablespoons tamari or soy sauce

3 tablespoons seasoned rice vinegar

Salt and pepper to taste

2 tablespoons lightly toasted sesame seeds
