Ingredients for 4 servings

2 tablespoons balsamic vinegar

1 red bell pepper , cut into bite-sized chunks

salt

6 red potatoes, cut into 1 inch cubes

1 green bell pepper , cut into bite-sized chunks

3 cups mushrooms , cleaned, stemmed, and halved if large (I use a variety of different types, strips of portabella are a nice addition)

1 sweet potato or yam, cubed

2 teaspoons fresh rosemary or dried rosemary , chopped

4 cups water

fresh ground pepper

10 garlic cloves , coarsely chopped

1/4 cup olive oil
