Ingredients for 6 servings

2 Tbsp creamy peanut butter

2 Tbsp rice vinegar

1 Tbsp soy sauce

1 tsp sesame oil

2 tsp white sugar

3 Tbsp vegetable oil

juice from 1 small lime

1 whole head romaine lettuce, chopped into bite-sized pieces

2 cups shredded cooked chicken (I often use a rotisserie chicken)

1 whole red pepper, cut into thin slices

1 carrot, shredded

1 cucumber, chopped

¼ cup cilantro leaves

4 whole scallions (green onions), thinly sliced (white and green parts)

½ cup roasted unsalted peanuts
