250 g of salt

250 g of sugar

5 g of star anise

10 g of coriander seeds

1/2 lemon, zested

1/2 orange, zested

1/2 lime, zested

1 whole side of salmon, pin bones removed and fully trimmed

2 tbsp of olive oil

2 beetroots

2 tbsp of olive oil

1 sprig of fresh thyme

100 ml of Cabernet Sauvignon vinegar
