Ingredients for 6 servings

3 pounds littleneck clams

Olive oil

6-7 slices of thick wood smoked bacon, cut into 1 inch slices.

5 garlic cloves, minced

2 cups coarsely chopped onions

2 cups coarsely chopped leeks (white and light green parts only)

Sea salt

4 large potatoes, peeled and cut into 1 inch cubes

1 Sachet (10 peppercorns, 1 bay leaf, 2 thyme sprigs, and 1 smashed garlic cloves)

3 Tbsp unsalted butter

1/4 cup all-purpose flour

3 cups whole milk

3 cups heavy cream (I’d use light cream in the future. Light, not lite.)

2 Tbsp unsalted butter

4 shallots, chopped

2 thyme sprigs

Sea salt

Freshly ground black pepper

1/2 cup dry white wine

3 Tbsp finely chopped chives
