1/2 cup small dice red onion

2 tablespoons small dice fresh ginger

1 1/2 cups low-sodium chicken or vegetable broth

1 tablespoon apricot (or other light-colored) jam, optional

-- Kosher salt to taste

1 cup trimmed green beans

1 to 2 teaspoons freshly ground star anise, to taste

1/4 to 1/2 teaspoon ground cloves, to taste

1/4 cup polenta

1 block soft tofu, about 1 pound (Azumaya brand recommended); or firm tofu, if desired
