1 red/yellow/orange pepper, seeded and chopped

1 tblsp. coconut milk or water

1/2 teaspoon salt

1 cup cooked brown rice

1/4 teaspoon adobo sauce/Chipotle hot sauce

1 mango, chopped

1 tblsp. spelt flour

1 can black beans, rinsed and drained

1 garlic clove, grated

1/2 cup pureed silken tofu

1 handful of cilantro, finely chopped

1 red onion, peeled and finely chopped
