SAUCE:

1 tablespoon canola oil

1 cup finely chopped onions

1 cup chopped crimini mushrooms

2 teaspoons minced or chopped garlic

2 (15-ounce) cans low-sodium tomato sauce

2 (6-ounce) cans low-sodium tomato paste

1 (14 1/2-ounce) can petite vine-ripened tomatoes, diced and including liquid

1 tablespoon sugar

2 teaspoons dried oregano

3/4 teaspoon salt (optional)

1/2 teaspoon freshly ground pepper

1 bay leaf

MEATBALLS:

2 slices whole-wheat or fiber-enriched white bread

1 pound extra-superlean or ground sirloin (9% fat or less)

1 large egg

1/4 cup egg substitute

1/3 cup shredded or grated parmesan cheese

3 tablespoons finely chopped italian parsley (regular parsley can be substituted)

1 teaspoon minced or chopped garlic

1 teaspoon dried oregano

1/2 teaspoon salt (optional)

dash or two of freshly ground black pepper

1 cup Italian-style bread crumbs

canola oil cooking spray

12 ounces uncooked angel hair spaghetti
