5 tomatoes (use mixture of heirloom tomatoes if possible)

1/2 cup diced red onion ( 1/4- inch dice)

2 jalapenos, seeded, deveined and minced

2 heirloom chiles (such as Bolivian, Hungarian Black or serrano), seeded, deveined and minced

1 garlic clove, minced

About 1/2 teaspoon salt (optional)

3 tablespoons hand- snipped cilantro

1 tablespoon fresh lime juice, or a dash of pepper vinegar (brings out sweetness of tomatoes)
