2 shallots, thinly sliced

1 teaspoon finely chopped sage

1 teaspoon finely chopped thyme

2 ounces chilled Brie with the rind removed, cut into 1/2 -inch cubes

8 phyllo sheets, plus more in case of tearing

About 4 tablespoons unsalted butter, melted
