Ingredients for 4 servings

1 1/2 cups carrots, peeled and sliced into 2-inch strips

1 package mochi (pounded rice cake)

1 package red kamaboko (fish cake) (I prefer brand name Yamasa)

2 to 4 dried scallops (optional)

4 skinless chicken breasts

1 1/2 cups daikon, peeled and sliced into 2-inch strips

Salt to taste

1 cup mizuna
