1 chopped onion

1/2 cup chopped carrots

1/2 cup chopped celery

3 cloves chopped fresh garlic

Parsley, to taste (Fresh, if available. Dried if not.)

Fennel, to taste (Fresh, if available. A few fennel seeds if not.)

salt, to taste

Pepper, to taste

1 cup tomatoes (fresh, frozen or, if canned, crushed.)

Romano cheese as garnish
