Ingredients for 10 servings

125 g golden caster sugar (this gives the meringues a lovely colour)

You will need

2 large unwaxed juicy lemons

Non stick baking paper/parchment

For the Iced Lemon Cream

3 eggs large (Preferably free range) separated

2 egg whiles

For the Meringues

125 g caster sugar

1.1 pudding basin and lid (plastic is best) for freezing

150 ml fresh single cream

284 ml fresh double cream

2 baking trays
