4 tablespoons + 1 teaspoon olive oil, divided

4 skin-on salmon fillets, 7 ounces each

4 tablespoons seasoned rice vinegar (see Note)

Black pepper to taste

6 cups loosely packed, bite-size pieces of romaine lettuce

2 small or 1 medium tomato, cut into wedges

1 avocado, pitted, peeled and cubed

1 medium cucumber, peeled and sliced into half moons

1/2 cup chopped cilantro, loosely packed
