1 white onion, peeled and thinly sliced

1 jalapeño, seeded and roughly chopped (or leave the seeds in if you’re a hot head and make it 2 jalapeños if you’re a super hot head)

2 tablespoons tablespoons extra virgin olive oil

coarse salt

½ cups cup fresh cilantro leaves

¼ cups fresh lime juice
