Ingredients for 12 servings

1 cup sharp cheddar cheese, shredded

2 to 4 tablespoons evaporated cane juice sugar

1/2 teaspoon salt

2 eggs

1/2 cup unbleached white flour

1/2 cup green onions, sliced

1 tablespoon baking powder

1/4 cup (1/2 stick) butter, melted

Ingredient Options: Cayenne pepper, sliced jalapeƱo or chili powder. Feel free to substitute whole wheat pastry flour for the white flour.

1/2 cup cooked and drained black beans

1 cup buttermilk

1/2 cup frozen corn kernels, thawed

1 1/4 cups yellow cornmeal
