Ingredients for 4 servings

1/4 cup diced green bell pepper (or red/yellow/orange if you don't like green)

2 cups chopped tomatoes

1 (15 1/2 ounce) can garbanzo beans , drained (chickpeas)

1/4 teaspoon salt , to taste

1/2 teaspoon dried basil

1/2 cup crumbled feta cheese

1 teaspoon dried oregano (crushed in your hand before adding)

3 cups cooked spaghetti squash , cut to desired lengths

2 garlic cloves , minced

1/4 cup diced red onion

3 tablespoons red wine vinegar

2 teaspoons extra-virgin olive oil

1 cup diced cucumber

1/4 teaspoon fresh ground black pepper , to taste

1/4 teaspoon balsamic vinegar

2 tablespoons chopped pitted kalamata olives
