1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3 tablespoons granulated sugar

1 tablespoon fresh lemon zest

1/3 cup unsalted butter, melted

2 large eggs

1 teaspoon pure vanilla extract

3 tablespoons fresh lemon juice

1/2 cup part-skim milk ricotta cheese

3/4 cup water or milk (I used water)

2 teaspoons poppy seeds (optional)
