Ingredients for 4 servings

olive oil

OLIVE GREMOLATA

500.0g small waxy potatoes , halved lengthways

400.0ml dry white wine

600.0ml vegetable stock

2 garlic cloves , finely chopped

3 garlic cloves , crushed

25 green olives in olive oil, stoned and chopped

2 small bulbs fennel , trimmed and quartered

55.0g raisins , soaked in hot water for 30 minutes and drained

250.0g baby pickling onions or shallots , peeled

1 small orange , zested

a good pinch saffron

2.0 tbsp chopped mint

1½ tbsp capers , rinsed

extra-virgin olive oil to serve

½ tsp chilli flakes

1½ tbsp pine nuts , toasted

1 small head cauliflower , broken into florets (pull off and keep any fresh leaves)
