  • 1 tsp grated ginger
  • 10 ozs spinach, trimmed, washed and dried, about 6 cups
  • 1/2 lb boneless top sirloin steak, trimmed of fat, thinly sliced
  • 1/2 red bell pepper, cut into thin strips
  • 3 Tbsps olive oil, divided
  • Salt and pepper, to taste
  • 2 Tbsps water
  • 3 Tbsps balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
