a handful of fresh mint finely chopped baby leaves reserved

olive oil

2 teaspoons allspice

10 tablespoons plain yoghurt

zest and juice of 4 limes

1 cinnamon sticks

1 red chilli deseeded and finely sliced

1 teaspoon ground nutmeg
