1 red onion , halved and thinly sliced

200.0g bag bean sprouts

small knob grated ginger

500.0g minced pork

1.0 tsp muscovado sugar or soft brown sugar

1 deseeded and shredded red chilli

pinch cayenne pepper

2-3 tbsp fish or soy sauce , to taste

½ a 250.0g pack fine vermicelli rice noodles

zest and juice 2 limes

1.0 tsp sunflower oil

4 x 175.0g sirloin steaks
