1 lb elbow macaroni

Handful salt to flavor the water

4 Tbsp unsalted butter

¼ cup flour

1 Tbsp dried oregano

1 tsp smoked paprika

½ tsp New Mexico chili powder

¼ tsp ground cumin

1 tsp garlic powder

½ tsp onion powder

½ tsp ground chili de arbol, (or cayenne pepper)

½ tsp kosher salt

½ tsp ground black pepper

2 cup milk

8 oz Mexican shredded cheese blend

1 (7-oz) can diced green chiles

1 (15-oz) can black beans, drained and rinsed

2 cup grape tomatoes, cut in half

2 Tbsp cilantro, chopped
